Roasted cauliflower salad with pork cutlets

 

  1. Step 1

    Preheat oven to 200C. Place the cauliflower in a roasting pan. Spray with olive oil. Sprinkle with chilli flakes. Season. Roast for 30 minutes or until slightly golden.

  2. Step 2

    Meanwhile, season both sides of the pork. Heat a non-stick frying pan over medium heat. Spray with olive oil. Cook pork for 4-5 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover and set aside for 5 minutes to rest.

  3. Step 3

    Toss the spinach in the frying pan over medium heat for 1 minute or until spinach just wilts. Season.

  4. Step 4

    Combine the cauliflower, raisins and oregano in a bowl. Divide the spinach and pork among plates. Top with cauliflower salad.
